Monday is off to a slightly rough start.
For starters, I haven’t been to the grocery store in awhile so breakfast options are waning on almost non-existent. You wouldn’t want to grocery shop either when the weather is consistently in a windchill zone of negative double digits. Today is -11*. Barf.
The sun is shining, the birds are chirping outside my window, but it is ridiculously cold, y’all. I’m just chillin’ in my jammies, watching The Oscars and trying to get up the courage and strength to be productive.
So far, the most productive thing I’ve done today is walk my dogs and scour Pinterest for a tasty paleo pancake recipe. I was excited to find this healthy pumpkin pancake recipe from Paleo Grubs and to my surprise I had all the ingredients! #winning
Though to be honest, my first attempt this morning wasn’t successful or delicious. I forgot the eggs. Big mistake. Hellooo, Monday, you win. I had to laugh it off because I was desperate enough to eat the first flaky batch until I decided to reread the recipe. I was thinking the author would say something like, “Don’t worry, these pancakes will crack but taste delicious.” No? That’s when I realized I forgot the eggs. Easy fix so I quickly whipped them up again.
This recipe is simple with just two steps, really three if you take into account mixing the dry ingredients, mixing the wet ingredients and then mixing them together. They are fluffy, filling and slightly savory.
I topped my pancakes with Navitas Naturals Cacao Sweet Nibs (cheaper here than my grocery store!) for a slightly sweet, healthy crunch and 100% maple syrup. Added bonus: put a little syrup in your coffee to go from boring to bold!
I hope your Monday is off to a slightly smoother start than mine 🙂 It can only go up from here, right?
