So, I didn’t quite get my fill of pumpkin flavored goodies during Thanksgiving. This fourless chocolate pumpkin cookie recipe from My Whole Food Life is as close to a healthy cookie as you’ll get. I never really thought that was possible because really cutting cookies out of your diet isn’t about finding a “healthy” option but about correcting the behavior of wanting cookies and junk all together. We’ll call this a guiltless cookie because it’s Paleo (dairy-free, grain-free, sugar-free), vegan and gluten free! HOORAY!
These cookies aren’t the prettiest but what they lack in looks they make up for in a deliciously gooey, fudgy texture. I did take Melissa’s substitute options and used cocoa nibs and sunflower seed butter instead of cashew butter to cut out the sugar and nuts.
To really get in the holiday spirit I used my adorable little Santa measures spoons, reindeer plates and washed my cookies down with a tasty cup of rice nog. I know what you’re thinking. I was skeptical, too. It’s actually really delicious and has the egg nog flavor we all love but it isn’t dairy.
Santa can look forward to a clean cookie option at the Johnson haus. I hope you enjoy these tasty drops of Heaven as much me.
