I’m always on the look out for a recipe that’s easy and delicious. I don’t like too many ingredients because I’m still getting use to this whole domesticity business. In an attempt to keep my fitness goals on track I’m learning to plan meals ahead of time and set a weekly menu, which I must admit was a hard concept for me to grasp. The thought of menu planning was overwhelming, daunting and boring. Then I realized, I don’t need to binge shop for weeks at a time, but plan on a week-to-week basis. Once this concept sunk in I was like watch out Betty Crocker! Side note: I’m nowhere near being a Crocker but a girl can dream.

I found a recipe for whole wheat strawberry banana protein muffins on Pinterest via ifoodreal. It sounded tasty, pretty easy and I had a lot of the ingredients in my pantry already.

Tip: make sure the bananas are very ripe to make mashing them easier.

A spritz of olive oil cooking spray and a dust of flour keeps the muffins from sticking to the pan.

I get a little anxiety at the end of any baking session that requires dividing the ingredients, especially muffin pans. I never get the estimation right, the muffins at the end of the batch are deflated because their tin didn’t get enough of the ingredients, but not this time! The 1/4 cup scoop per muffin was perfect. I hope you enjoy them as much as I did.
